Mozzarella and Spinach Stuffed Chicken

I was looking through Pintrest and came across a recipe for Pepper Jack and Spinach stuffed chicken. I thought the recipe was super easy, and sounded good except for the fact I don't like pepper jack cheese. So I thought I would give it my own twist.
Here is what you will need
  • 1pkg Tenderized Chicken Breast
  • 1pkg Frozen spinach (thawed)
  • 1 bag Mozzarella Cheese
  • Italian Bread Crumbs
  • Salt and pepper to taste. 
  • Foil
  •  Baking dish        



First rinse your chicken, tear off a piece of foil that would cover the chick.
lay out a thin layer of bread crumbs and place the seasoned chicken breast on it.

Place some mozzarella cheese and spinach in the center of the chicken breast. Here why I choose to use the tenderized chicken. You want to pull the edges of the chicken around the spinach and mozzarella, as you are doing this you will pull the aluminum full around it until it forms a ball.
 
Place the chicken in the foil in a baking dish, and bake for 45 minutes. After baking take the chicken out of the foil and serve. I severed mine with brown and wild rice with veggies!

Surprise Visit, Meet Jingle Bells

We have adopted a new tradition, I have seen these litttle guys every where, and decided it was my turn to hop on the ban wagon. Our elf is brown skin with brown eyes and is a girl.

The girls have named her Jingle Bells, because that sound reminds them so much of Christmas. This tradition is about a family adopting the elf, and the elf watching over the kids and reports what she sees back to santa.

Everymorning the kids will wake to see Jingle Bells doing slilly things. So Keep watch every day to see where she ends up!
This is going to be so much fun!!

Oh How Time Flies

This time 6 years ago I got news that changed my life forever. I say it changed my life forever because it gave me such a different outlook on life. This change made me a better person, and made my strive to not only to do better for myself but for the life I was going to be in care of. The day I found out I was going to be a mom I knew there were going to be sacrifices made, some were going to be easier than others. As I reflect over the past six years I can honestly say I'm proud of myself. I have overcome so many obstacle and found a balance for us. I know this wasn't done alone and wasn't possible without my loving husband. We have been blessed to have each other to lean on for support and guidance, along with our family and a handful of friends. I realized that there is so much more to life, and even more that I still have to learn.

The Mommy Diaries: How I'm Surviving Parenting without Killing Anyone


I was offered the chance to review a copy of “The Mommy Diaries” by humorist Dallas Louis. When I first read the title I had to admit, this is how I often feel at times. So I knew this was going to be a good read. I have two kids three years apart from each other, and I feel like a tornado has hit me at the end of each day. After hearing what the Author Dallas Louis had to go through, I couldn’t imagine having three kids all born within 26 months of each other.


What do you get when you mix a crawling toddler, a screaming baby, and a sudden craving for pickles and ice cream all over again?

Sheer panic, for starters.  

After having three children within 26 months (none are twins), Dallas Louis’ life has been a non-stop circus. From nearly getting kicked out of Disneyland after her youngest tackled Cinderella, to being on a first name basis with her family orthopedic surgeon, Louis’ children and home life are a constant source of material – enough to fill her new book, The Mommy Diaries: How I’m Surviving Parenting without Killing Anyone (May 2012).

When the say laughter is the best medicine, they meant being able to laugh at yourself will get you through your day. I have found that I can relate to this book as I too have had many runs to the ER, many embarrassing accidents, and tantrums in stores. This book is very inspirational and shows that not every family, child or parent is perfect.  At the end of the day, I know I can just chuckle to myself and say I made it. This book would be an Idea gift for the Mom who has been through it all and then some!

The Kickstarter Campaign



First time children’s book author Nick Dazé, is in the final days (63 hours to be exact) of his campaign to raise funding to independently publish his children's book Roger Nix President at Age Six. 
The story is about kindergartener Roger Nix, an ordinary boy: Roger loves kindergarten, playing make-believe, and hanging out with his imaginary friends (a baby donkey named Jack and a baby elephant named Abe). But when he learns about the plans of Old Man Plee, a perennial presidential candidate, to shut down schools and send kids to work in factories as an austerity measure; Roger decides to run against Old Man Plee as a defender of “school and summer vacation, learning and imagination”. Of course Abe and Jack are there to help him every step of the way.
Nick Daze and his incredible Kickstarter campaign (http://www.kickstarter.com/projects/787960356/roger-nix-president-at-six) have already raised nearly $22,000 and only has $8,000 more to go in order to put the book into production.  The book has been fully written by Daze and the illustrations beautifully crafted by Bill Robinson www.FlimFlammery.com . Each $30 pledge towards the Roger Nix campaign comes with a first edition hardcover copy of the book, delivered in time for the new school year this fall.  This is a timely story that is fascinating, engaging, and a thought-provoking read for both kids and parents written by a imaginative adult who was encouraged to explore his imagination as a child.

A debate would take place between Roger and Plee.

I was asked to compare what was under my sick and the harsh chemicals that were used in them, to Shaklee Get Clean Kit. Here are some of the harsh chemicals that I found in my house hold cleaners: kerosene, phenols, cresol, lye, hydrochloric acid, sulfuric acid, sulfuric acid, petroleum distillates, ammonia, sodium hydroxide, butyl cellosolve, phosphoric acid, formaldehyde, chlorine bleach, morpholine, phthalates. Along with these components I also took a close look at the instructions, most bottles say” use in a well ventilated area”. It’s shocking to me that I use these products in places where there are no windows and no true way to ventilate. So as I’m cleaning I’m harming myself with the fumes these cleaners can give off.


For my review, I thought I would tackle a place in the house that gets messy fast. It’s a place that I take care in cleaning, because we use it every day with our food. I will show you a before and after picture of our microwave. I have used it several times without covering the food for this review.
To get started I had to mix the ingredients. I mixed the 1 ½ tablespoon of the Basic H2® Organic Super Cleaning Concentrate with 16 oz’s of water. That’s it. This makes the degreaser that you use in the kitchen. After mixing it I noticed, there is not a strong order or any fumes. I simply sprayed this in the microwave and wiped it out. It left my microwave looking like new.

The God Box ::Book Review::

When we walk our spiritual path in life, we all find our different ways to communicate and get our thoughts and prayers out. We struggle with everyday stress and feelings of helplessness and anxiety. How do we find the strength inside ourselves to give it up to God and let go?

Mary Lou Quinlan's mother Mary Finlayson found the key inside herself. She found a way that helped her lift her burdens and prayers that she carried with her from day to day. She used her God box as a release of everything she needed to get out. Instead of dwelling on a prayer or something she worried about, she would write it down as if she was releasing this burden off her shoulders.

This books takes us on the journey of Mary Lou Quinlan discovering her mother all over again. She was close with her mother and knew her better then she knew herself. And with the help of her mothers' God Box Mary is able to see that her mother was more then what she was perceived to be. Being the strong unbreakable mother was only half her story.

This book is such a good read. The bond that this family had, and the mother that prayed for and loved her family unconditionally.

The Game of Life zAPPed Review

I had an opportunity to review Hasbro’s The Game of Life zAPPed edition. Hasbro has found a way to bring a classic game into the world of electronics. The Game ofLife zApped edition allows you to interact with a game in a whole new way. It uses the free Game of Life zAPPed app from the iTunes app store that allows for a whole new interactive experience during the game. 




This game is played as the original; the biggest difference is your Ipad takes the place of the plastic spinner in the middle or the board. Your Ipad takes the place of the plastic spinner that used to sit in the middle of the game board. 
You still have the same cars and the  pink and blue pegs that are used as players. With the Ipad app when you lad on a zapp spot you can unlock mini games, funny animations or clips from “America’s Funniest Home Videos”. With more interaction with the game you will never want to stop playing it. This game has been a big hit with my family and I would recommend this to anyone that is looking for a fun filled game night at home! The app on iTunes is free, the only thing you have to pay for is the game itself which is only 24.99! You must have an Ipad to play this version of the Game of Life

My Girl's New Paradise

My daughters are growing and starting to show their own personalities and I wanted to do something for them that would last longer than the usual toy.  Something that will help them come into their own and really fit their own personality.  So I decided to decorate their rooms to fit their personalities and their likes.
From the start I knew this wasn’t going to be an easy task. So I sat the girls down, had them pick several colors they liked, then one color that was their favorite. The favorite color is the color we choose to fit the décor around. 
Nikyra being the girly girl she is pinked pink as her favorite color. And not just any pink, it had to be a bubble gum pink.  Janae wanted a dark purple almost the color of a grape. 
So my husband and I ventured out to Lows to find the right paint colors we chose Pink-Flutter for Nikyra, and Simply Purple for Janae. It took us a while, because we had to find a color that worked best with the lighting in the girl’s room. Since we use energy efficient light bulbs they don’t get as bright as regular ones, so we didn’t want a color that was going to look yellow or dingy under the light. These colors actually looked the best under all types of lights.
After getting the paint, we painted one wall the color of their choice (pink, and purple) and the rest of the walls white. I only allowed one wall to be colored, because I didn’t want it to make the room look smaller or too dark. To me having the white walls mixed it, brings in more light and makes the rooms look bigger.
As for the décor in Nikyra’s room we painted a white square in the center of her pink wall. We did this because her bed is a platform bed, and doesn’t have a head board. The white square with the décor in it acts as one.  Being that I was making their rooms personally for them I wanted to get something that made it their own. So I decided to get wall letters that spelled out their names and fit their personalities.
 As I was looking through etsy.com I came across Me and These Three’s page and fell in love with her letter blocks. So I just had to have them for Nikyra. These blocks are each hand made and very creative. She was able to take my visual image of what I thought fitted Nikyra’s personality and she turned it into these. The quality of her work is remarkable and I can guarantee they would be one of a kind. These blocks have been a big hit with Nikyra and probably have been her favorite thing out of her room.  Along with her letter blocks we decorated her wall with the white cube shelves and white flowers and mirror butterflies. We used a pink, green, and yellow lady bug comforter set from target.
For Janea’s room I decided to channel my inner crafter, and I can say I’m very proud how it turned out. I found basic wood letters are Walmart for under $2.00 and some simple craft paint and painted her letters. With Janae’s room I also used the same white cubed shelves along with the white flowers. Instead of using the mirrored butterflies, I was able to find different color butterflies with dragon flies that matched the colors in her bed set.
All in all with the little changes we did to their rooms, we made a big impact on our girls. They are able to express their difference in their own creative way!
