Whats for Dinner: Crescent Pizza Pockets

One of my goals for the year is to involve the kids more when I cook. I have learned that if they help, they know what they are eating and are more likely to try new foods.  So as I browsed the net to find something easy fix and something that is kid friendly. I came across a recipie for Cresent Pizza Pockets by Pilsbury.  I didn’t follow the recipie exactly, but I stayed pretty close to it.  Here is what I used:
INGREDIENTS
1can (8 oz) Pillsbury® refrigerated crescent dinner rolls

1tbl sp  pizza sauce (per pocket)

 shredded mozzarella cheese

Shredded sharp chedder cheese

 sliced pepperoni

I took the cresent rolls one at a time and rolled them in a ball. I took one ball put a little flower on the counter and my little rolling pin and rolled it in a circle shape.

I placed the ingredients in the middle of the dough. Try to make sure you have enough dough on the edges to piece together.



I gently pulled the dough as I closed up the pocket and pinched it around the ends.



To make it look pretty I took a fork to give the edges the pleated look, and then with the chedder cheese I made the initials of the girls on the pockets they made. I let the pockets cook for 13 minutes (I let the pockets cool for a bit, because my girls are younger and I didn’t want them to burn themselves). Along with the pockets I severed a salad with a side of corn. I have to say that this was an easy meal to make and the girls loved to help out with it.  If you have and simple recipies that you would like to share I would love to hear from you! Enjoy!

Waiting to exhale, and almost there

I know that we all have personal goals that we set for ourselves. I have set so many that it’s hard to keep track of them all. One of the most important that is to finish college in so shape or form. I want to set an example for my children to let them know that it is possible no matter the circumstance.  A brief history on me, I graduated in 2000. I always though college wasn’t for me, so I enrolled in the local community college and dropped out after a year and a half. After working for ten years, and finding a field that I love working in I decided I needed to take my job to the next level. I reenrolled in the same community college for an Associate in Science with a concentration in office administration in general and legal office.  Today I filled out my paper work for spring graduation and I will be walking across that stage in May! To me this is a huge accomplishment. I hate it took me ten years to figure out what I wanted to do, but I say it is well worth it.

The North Face at Zappos.com

One of my favorite brands of all time for jackets is The North Face. I’m a big fan of them because they are durable and they last long. I have owned one from some time now and they are beyond comfortable and do a good job of keeping you warm and stylish.  In many of the department stores here where I live there is always a limited selection of women jackets to choose from. I always like to shop online to find a website I trust with the best deals available. My New Year Resolution

My New Year Resolution
I hope everyone had a wonderful and blessed time bringing in the New Year. I have had several people ask what my New Year resolution would be and it didn’t take long for me to come up with one. My New Year Resolution is the easiest ever. I know that most people plan to stick to a diet, quite smoking, or even save money. I know at some point in my life I have to do at least two of those. I never made them a New Year resolution though.  I know that I don’t have to tell myself over and over what I need to do, or what I need to quite. I know that I simply have to pray for guidance.  I know that nothing I do is possible without Christ. So for my New Year resolution I’m simply going to pray more and give thanks to him every chance I get.  Here are my blessings for the year 2011. All things are possible through Christ.
