Whats for Dinner: Crescent Pizza Pockets

One of my goals for the year is to involve the kids more when I cook. I have learned that if they help, they know what they are eating and are more likely to try new foods.  So as I browsed the net to find something easy fix and something that is kid friendly. I came across a recipie for Cresent Pizza Pockets by Pilsbury.   I didn’t follow the recipie exactly, but I stayed pretty close to it.  Here is what I used: INGREDIENTS 1can (8 oz)   Pillsbury®   refrigerated crescent   dinner rolls 1tbl sp  pizza sauce (per pocket)  shredded mozzarella cheese Shredded sharp chedder cheese  sliced pepperoni I took the cresent rolls one at a time and rolled them in a ball. I took one ball put a little flower on the counter and my little rolling pin and rolled it in a circle shape. I placed the ingredients in the middle of the dough. Waiting to exhale, and almost there

I know that we all have personal goals that we set for ourselves. I have set so many that it’s hard to keep track of them all. One of the most important that is to finish college in so shape or form. I want to set an example for my children to let them know that it is possible no matter the circumstance.  A brief history on me, I graduated in 2000. I always though college wasn’t for me, so I enrolled in the local community college and dropped out after a year and a half. After working for ten years, and finding a field that I love working in I decided I needed to take my job to the next level. I reenrolled in the same community college for an Associate in Science with a concentration in office administration in general and legal office.  Today I filled out my paper work for spring graduation and I will be walking across that stage in May! To me this is a huge accomplishment. I hate it took me ten years to figure out what I wanted to do, but I say it is well worth it.

My New Year Resolution

My New Year Resolution I hope everyone had a wonderful and blessed time bringing in the New Year. I have had several people ask what my New Year resolution would be and it didn’t take long for me to come up with one. My New Year Resolution is the easiest ever. I know that most people plan to stick to a diet, quite smoking, or even save money. I know at some point in my life I have to do at least two of those. I never made them a New Year resolution though.   I know that I don’t have to tell myself over and over what I need to do, or what I need to quite. I know that I simply have to pray for guidance.   I know that nothing I do is possible without Christ. So for my New Year resolution I’m simply going to pray more and give thanks to him every chance I get.   Here are my blessings for the year 2011. All things are possible through Christ.
